Chestnut Mushrooms
Not to be confused with the sometimes mis-named common Cremini button mushroom, true Chestnut mushrooms (Pholiota adiposa) are known for their nutty flavour and the contrasting textures of their silky caps and crunchy stems. Unlike some other mushrooms, Chestnuts famously retain these textures even after long cooking times, making them well suited to early inclusion in slow-cooker, hotpot, soup and stew recipes, but equally at home roasted, grilled or fried for late addition to sauces, pasta or risotto dishes.
