The Wine Cap/King Stropharia (Stropharia rugosoannulata) is a 'garden giant' mushroom grown in outdoor woodchip beds, producing large, dark-gilled, burgundy caps and thick, meaty, white-fleshed stipes (the 'stalk' of a mushroom) easilly the rival of both Portabella and King Oyster mushrooms. Recommended sautéed or grilled for crisp earthy/nutty stipes and caps tasting remarkably like baby potatoes in wine sauce. Along with a variety of health benefits in common with many other mushrooms, the Wine Cap is unusually reported to 'strengthen bones', courtesy of sterols which reduce natural osteoclast activity that can lead to osteoporosis in an unbalanced metabolism.
