Pioppino
The Pioppino Mushroom (Cyclocybe aegerita) has a mild, earthy and nutty flavour with a firm texture. This mushroom goes well in rice, risotto, or stir fry dishes, complimenting or replacing meat in recipes, used frequently in soups, stews, and hot pot. Known in Chinese cuisine as 'Tea Tree Mushroom', and in Japan as 'Yanagi Matsutake' (literal translation: "willow pine mushroom").
